Vegan Picnic Menu!

The other day, my husband and our friend, Alex, had a wonderful picnic before Music & Movies in the Park at Lake Harriet. I wanted to share the menu because it was just so yummy! You could have a lovely vegan picnic for the festivities this Fourth of July weekend!

Vegan Picnic Menu

Appetizer: Kiwi Summer Rolls, from the cookbook Power Foods: 150 Delicious Recipes with the 38 Healthiest Ingredients
Perfectly portable for a picnic! Make a bunch of these, throw them in a container and keep the sauce in a small container with a tight-fitting lid. Just make sure you bring napkins because they can be drippy when you dip them.

Salad: Vegan Potato Salad
I had never made a potato salad before this picnic, and I was looking to make one that was lighter than the traditional version. I kind of hate mustard, so I used honey mustard, which gave a great sweetness and tang, along with champagne vinegar, lemon juice, olive oil, salt and pepper. I added tons of fresh chives, green onions, and parsley. The boiled potatoes went right in, a quick toss and it was done.

Main Dish: Gluten-Free, Vegan Sandwiches
I made a creamy tofu spread, recipe also from Power Foods, to go on our sandwiches. It was a little bland (and smelled like tofu, which I did NOT want), so I doctored it up with herbs and extra lemon and it turned out fantastic. I spread it on some GF bread and paired it with roasted zucchini and red bell peppers and finished it off with fresh spinach. Perfecto.

Watermelon, Lemonade, and Malibu rum cocktail Drinks: Agua Fresca
We blended watermelon with lime juice, a little sweetener (agave or honey would work well), and some fresh mint. Add bubbly water, if you like and. Pour into mason jars with ice for a refreshing, portable drink.

A similar (alcoholic) recipe is my Watermelon Cocktail. Make the recipe portable by blending all the ingredients except for the ice, and serving it on the rocks in mason jars.

Cucumber Lemon Water with Basil - A super easy, healthy and refreshing summer beverage! Cucumber, Lemon, and Basil-Infused Water
I filled a cute Weck Juice Jar with 10 slices of cucumber, half a lemon, and six basil leaves. It was super delicious once we finished our agua fresca! It’s hot! Staying hydrated is super important.
