Now that I’m on a grain-free, vegetarian diet, I eat a lot of cauliflower. Since I eat so much cauliflower, I’ve discovered a super easy method of how to cut it into florets for use in whatever recipe you please.
Roasted cauliflower rice is definitely the best way to eat cauliflower rice. I know from experience.
You may think I married a vegan. I didn’t. When Stephani and I met, she reluctantly ate meat. She still beheld the power of cheese. And I’m not sure she knew what gluten was yet ( I certainly didn’t). So when I say I married a vegan, I really mean I married a lady who became a vegan.
Narrowing down the diet Stephani eats today has been an evolution that has given me a firsthand look at the phases of vegan life.
For breakfast on our first day in Portland, Eric ordered a gorgeous bowl of yogurt and granola at the darling cafe at The Society Hotel. He loved it so much that he’s been eating a version of it at home nearly every day since. Being on a grain-free diet now, I set out to create a homemade grain-free granola recipe I could eat as well and here we are: Oat-free millet granola!
I am addicted to bread. Sadly, I have been gluten-free for more than 5 years, which means I’ve been missing out on delicious bread for a long time. But there’s good news because I’ve developed a fantastic paleo biscuits recipe and. it. is. so. good. These are even better than gluten-free breads, which I tend to enjoy, so I’m pretty smitten with these homemade fluffy, savory pillows of heaven (can you tell?). They’re also really easy to make and low ingredient to boot!
I’m not a good cook. That’s an important fact. My mom thinks I’m a good cook, because she swears that anyone who can read can follow a recipe, and thus, can cook. I’m also the only one in my family who uses salt.
I always see recipes for homemade granola bars come through my Pinterest feed and I must admit I thought they seemed kind of fussy. But now that I’m on a fairly restrictive diet, I find it hard to find pre-made snacks that don’t contain ingredients I’m supposed to avoid. That’s where these awesome homemade granola bars come in, and they’re anything but fussy! They take about 5 minutes to throw together in a food processor, then refrigerate for 30 minutes or so and they’re ready to enjoy!
