Gluten-Free and Vegan Norwegian Krumkake recipe

No matter that Thanksgiving is still a few days away … I’m ready for krumkake. Why? Because up until a few weeks ago, I hadn’t eaten it in 5 years. This Norwegian waffle cookie is a staple of my grandmother’s Christmas cookie baking and I’ve always loved the flaky, delicate rolled cookies. And in case you didn’t know, the main ingredients are gluten and dairy. Last year after Christmas I begged my grandma to let me borrow her krumkake iron so I could test a gluten-free and dairy-free recipe, and she happily obliged, providing me with not one, but two irons to choose from.

It took me almost an entire year to get up the courage to test a recipe, but it worked the first time around and it is absolutely delicious. I took a hint from the box of her vintage Nordic Ware iron and added some cardamom to the batter. It made them even better than I remembered!

  • 1 egg
  • ⅓ c. coconut sugar
  • ¼ c. coconut oil, softened*
  • ¼ tsp. cardamom
  • ¾ c. gluten-free all-purpose rice flour blend**
  • ¼ tsp. baking soda
  • ½ c. unsweetened almond milk
  1. In a medium bowl, beat egg. Add sugar, softened coconut oil, and cardamom. Whisk until combined. Add gluten free flour blend, baking soda, and almond milk and whisk until smooth. Bake as directed on your krumkake iron.
*Earth Balance vegan butter alternative also works for this recipe.

To develop this recipe I halved the original. If you double the ingredients for a full recipe, you'll get around 50 cookies.
My grandmother makes these plain, without filling. But I filled mine with coconut whipped cream. They are delicious either way.

I was trying to figure out what to do with my extra cookies (the recipe I based this off of made 50 cookies so I cut it in half), and I had an idea: krumkake cake! Just the same as a crêpe cake, but tinier and more adorable. I layered each unrolled cookie with coconut whipped cream and then topped the krumkake cake with a little dollop of the coconut whip and a dash of cinnamon.
