Sweet Potato Hash

This easy breakfast recipe is a savory spin on sweet potatoes, with lots of spices and garlic, mixed with poblano peppers and scrambled eggs. Serve with a side of tempeh bacon! For a lectin-free option, leave out the peppers.
Ingredients
  • 2 medium sweet potatoes, peeled and cubed in small pieces*
  • 2 tbsp. olive oil or avocado oil
  • 1 tsp. smoked paprika
  • ½ tsp. turmeric
  • ½ tsp. sea salt
  • ½ tsp. onion powder
  • ¼-1/2 tsp. ground black pepper
  • 2 cloves garlic, finely minced
  • 1 poblano pepper, seeded and chopped (leave out if you're strictly lectin-free)
  • Scallions, green parts only, sliced on a bias
Instructions
  1. Heat oven to 400 degrees F.
  2. In a medium or large bowl, toss peeled, cubed sweet potatoes with olive oil. Add paprika, turmeric, sea salt, onion powder and black pepper and mix to combine. Pour onto a sheet pan. If the pan is crowded, feel free to split it between two pans.
  3. Bake for 20 minutes.
  4. Remove the pan from the oven and stir the sweet potatoes. Be gentle as they may still be soft and you don't want to smash them. Add the chopped poblano pepper to the pan and return it to the oven for another 10-15 minutes.
  5. Remove the pan again and add your finely minced garlic cloves for the last 5 minutes of the cook time. If the sweet potatoes are getting too dark, it's OK to turn off the oven at this point and let it cook with the residual heat, maybe propping the oven door open if possible to let some heat out. You just want to barely cook the garlic until it smells heavenly.
  6. Remove from the oven and top with scallions. Serve hot with scrambled eggs or tofu scramble (vegan option), tempeh bacon and hot sauce if desired!
Notes
*Mine were about 1200 g before peeling and one of mine was a bit larger than the other.
