Popcorn has pretty much always been my favorite snack. Just look at this picture of little me enjoying my dad’s delicious popcorn with real butter and salt.
Just so content. Mmmmmm!
Obviously now I can’t eat that version, but I eat my vegan popcorn recipe pretty much every week. I just air pop a huge batch, drizzle with coconut oil and sprinkle with salt. It’s even better the next day! The coconut oil sort of hardens on it and makes it even more tasty.
If you can imagine a world where popcorn does not come with butter, you can start to see a million possibilities. Use this recipe as the most basic form of movie theater-type popcorn, vegan style. Then, you can dream up a million different flavor combinations. See my favorites at the end and then let me know what you come up with!
Vegan Popcorn Recipe
- Air popper
- coconut oil
- Air pop any amount of popcorn, or use oil to cook it in a pan, if that's your jam. Drizzle melted coconut oil over the top, add a sprinkle of salt and mix thoroughly. Add more coconut oil/salt to taste, if necessary.
We have an old school air popper handed down to us from Eric’s parents, similar to this Presto PopLite Hot Air Popper. (But ours is way cooler because it’s retro!)
Delicious Vegan Popcorn Combinations
-If I’m in a super savory, spicy mood, I reach for hot sauce to drizzle on top. It’s my lazy version of this vegan Nacho Cheesy Popcorn from Jason Wrobel. (The hot sauce version doesn’t keep well, so only do it on the portion you’ll eat right away.)
-I love to do the coconut oil and salt, with a sprinkling of nutritional yeast.
-This puppy chow popcorn from My Happy Place is AMAZING. Quite decadent. Just use dairy-free chocolate to make it vegan.
