These little polenta cakes pack a big flavor punch! Perhaps my favorite part is that they’re crispy on the outside and chewy in the middle. They’re also seasoned from the very first step, so you can eat them plain or dip them in a sauce and they’ll be delicious either way!

This weekend we were busy hosting brunch for my brother-in-law’s birthday and some of my recipes got real life taste-testing experience. We devoured my paleo Dutch Baby topped with strawberry chia seed jam, scrambled eggs, sweet potato breakfast potatoes and fruit. It was delicious and a wonderful time to gather with the family.
Man oh man oh man are these loaded hash browns good. My favorite thing about them is that without much thought, they turned out incredible! On a whim I just had the idea and ran with it.
The hash browns are crispy crunchy, the eggs are creamy and the bell peppers are cooked till they melt in your mouth. Plus, it’s perfectly seasoned and has just a hint of sweetness from the coconut oil. Drooling yet?
