I’m fairly certain I inherited my mother’s gene for being resourceful with just a few ingredients in the kitchen. Case in point: Eric and I were going to attend a party and we were asked to bring an appetizer. We didn’t have time to run to the store, so I rifled through our pantry and scrounged up some corn tortillas that were a little past their taco prime, a few cherry tomatoes, and an avocado that was surely about to go bad any day. We made them into homemade chips and guacamole and it was a huge hit at the party! This is a surprisingly easy appetizer that’s hard to mess up. And believe it or not, it’s cheaper and much more delicious than buying a bag of chips and a tub of pre-made guac.

I just love it when my picky friends enjoy a raw, vegan dish that I’ve made! My taste testers loved this, despite their original skepticism. But, I was skeptical of these faux noodles at first, too.

This zucchini noodle (zoodle) salad is yet another good replacement for traditional pasta salad (just like my broccoli, white bean and spinach salad!) at a potluck or picnic. With these flavors you won’t even miss the wheat. My friends love it and are shocked at how many veggies they can eat when they’re drizzled with a tangy dressing!

How to Make Homemade Hummus + a Veggie Tray

Don’t hate on the crudités. To some, a vegetable platter might seem too simple or passé, but to people like me, a spread of beautiful vegetables and something yummy to dip them in is the perfect thing to serve when company’s coming. Particularly when you’re expecting guests who have dietary restrictions. Plus, if you do it right, it can be absolutely lovely. Behold:
