This side dish is completely different than what you’re probably imagining: no hard-boiled eggs or mayonnaise, which can both be a turnoff to some people. Tangy, sweet, pungent balsamic vinaigrette. Dang, is it good.
I take a salad for lunch nearly every day and sometimes I also have it for dinner. Bananas, right?! Who wants to eat that much salad? I do. And it’s because I have a secret weapon: homemade dressing.
Word of caution: If you’re trying to get more vegetables into your diet, don’t try to eat a few spring greens with tomatoes and bottled dressing from a shelf. That’s no fun at all and I can pretty much guarantee you’re not going to love it like I love my salads.
I haven’t purchased shelf-stable dressing in pretty much my entire adulthood because I think it leaves a lot to be desired. And when a lot is left to be desired, who’s gonna eat their vegetables?! Not me. Everyone needs more veggies in their life. That’s for certain.

Looking for an easy, healthy AND tasty lunch that’s loaded with vegetables? These lettuce wraps are probably the best you’ll find. You can load them up with whatever veggies and fillings you want. Add nutritious toppings like hemp seeds or other favorites and you’re in business! Plus, they’re one of the easiest to put together because you assemble as you go.
I am obsessed with this corn salad. Per usual, my favorite part about it is that you can build upon it and include your favorite summer staples. I’m imagining fresh grape or cherry tomatoes and some diced avocado. Or maybe you make it Mexican style and add black olives, black beans, tomatoes and some green chiles. You could even add in some fruit to make it a sweet/savory combo, like peaches or pears.
I just love it when my picky friends enjoy a raw, vegan dish that I’ve made! My taste testers loved this, despite their original skepticism. But, I was skeptical of these faux noodles at first, too.
This zucchini noodle (zoodle) salad is yet another good replacement for traditional pasta salad (just like my broccoli, white bean and spinach salad!) at a potluck or picnic. With these flavors you won’t even miss the wheat. My friends love it and are shocked at how many veggies they can eat when they’re drizzled with a tangy dressing!
