Recently a few co-workers were talking about this Dill Pickle Ranch Chex Mix recipe at bettycrocker.com and how incredibly addictive it is. I absolutely LOVE dill pickles and chips, and once I finally got up the courage to try the slightly odd dill pickle chips I was completely hooked. So, naturally, when I heard how good this snack mix was, I wanted to come up with my own gluten free, dairy free Dill Pickle Snack Mix recipe so I could enjoy it too! Continue reading
I’m fairly certain I inherited my mother’s gene for being resourceful with just a few ingredients in the kitchen. Case in point: Eric and I were going to attend a party and we were asked to bring an appetizer. We didn’t have time to run to the store, so I rifled through our pantry and scrounged up some corn tortillas that were a little past their taco prime, a few cherry tomatoes, and an avocado that was surely about to go bad any day. We made them into homemade chips and guacamole and it was a huge hit at the party! This is a surprisingly easy appetizer that’s hard to mess up. It’s that time of year when watermelon goes on sale everywhere and, because it’s such a delicious and hydrating summer treat (my husband’s favorite fruit, in fact), we’re buying it constantly.
When we went on our picnic in June, I was trying to come up with a refreshing watermelon cocktail that included several of Eric’s favorite things. We settled on watermelon, lime, mint, and gin. It was a huge hit!
Well, Bon Appetit beat me to posting this today, but we’ve been enjoying this super refreshing cucumber lemon water with basil all summer long. The idea came to me when we were planning a vegan picnic and wanted something satisfying to drink. Our basil has been growing like crazy this summer, so I thought I’d try adding it to some water with cucumber and lemon. It was a hit!
Don’t hate on the crudités. To some, a vegetable platter might seem too simple or passé, but to people like me, a spread of beautiful vegetables and something yummy to dip them in is the perfect thing to serve when company’s coming. Particularly when you’re expecting guests who have dietary restrictions. Plus, if you do it right, it can be absolutely lovely. Behold:
