It’s that time of year when watermelon goes on sale everywhere and, because it’s such a delicious and hydrating summer treat (my husband’s favorite fruit, in fact), we’re buying it constantly.

When we went on our picnic in June, I was trying to come up with a refreshing watermelon cocktail that included several of Eric’s favorite things. We settled on watermelon, lime, mint, and gin. It was a huge hit!

Then, when I went on a trip to a friend’s cabin last month we decided to experiment with a watermelon cocktail again. Our delightful concoction was watermelon, lemon, and Malibu. Wow. Delicious (and a little dangerous!).

So, not quite recipes—these are more “wing it” situations—but here are some delightful combinations to try with your abundance of ruby red watermelon. These are just as good when served virgin, so don’t leave the kids out.

PRO TIP: For the recipes below, if you plan ahead and blend your watermelon ahead of time, you can freeze the juice in ice cube trays, then omit the ice altogether.

Watermelon Cocktail #1: Watermelon + Lime, Mint, and Gin

Gluten Free | Dairy Free | Vegan | Soy Free

In a blender, combine cubed watermelon, fresh lime juice, mint leaves, and gin. When the taste is to your liking, blend with ice. Serve with a lime wedge garnish and top with an additional mint leaf.

Watermelon Cocktail #2: Watermelon + Lemon and Malibu

Gluten Free | Dairy Free | Vegan | Soy Free

In a blender, combine cubed watermelon, fresh lemon juice (we had lemonade on hand), and coconut rum. When the taste is to your liking, blend with ice. Garnish with a wedge of watermelon or lemon, if you like!
